Korean chicken dish with sweet potato and yum yum sauce
A colorful Korean chicken bowl with sweet potato and Yum Yum sauce is the perfect dinner all night long. Chicken drenched in a dazzling barbeque sauce inspired by sweet Korean and spices, toasted with sweet potato, served in bowl with steamed rice, homemade yum sauce, and vegetables. This quick, easy-to-cook dinner comes together in about an hour. It is colorful, healthy and does not exceed good. Include this in a rotating monthly dinner or pre-prepared and enjoy lunch throughout the week.
It's colorful, delicious, and full of everything I love. I have been sticking to this recipe for a few weeks now and I can't encourage more to share it. These bowls are good ... simple ... and very healthy. Do you see all this color? Perfect for these very white snowy winter days.
Sure, at that time of year when I really start a passion for color when it comes to cooking. She struck a bit of a "slump" with comfortable and colorful winter recipes. So I switched gears and decided to bring all the colors back. Enter this bowl. Everything from chicken to sweet potato, to all "optional" additions, is colorful. And most importantly, this dish is very tasty.
The added bonus is that this recipe is made entirely on one plate and within just one hour. Great for a weekend getaway, but delicious enough for the weekend too. The flavors are of course inspired by my family’s trip to South Korea for the 2018 Winter Olympics. It's crazy to think it was almost two years ago, until today (Red got gold on February 11)! I love being able to bring back all those amazing memories through food. It brings me back to a really special time.
How to make a Korean chicken dish pan.
First, if you are going to cook rice, start with it now so that it can cook while you cook chicken.
After that, start with the sweet potato as it takes longer to cook. Put it on a frying pan and start to roast it simply with sesame oil, salt and pepper.
While roasting potatoes, make a Gochujang sauce. This is a very simple blend of Gochujang (korean pepper paste), soy sauce and sesame seeds. Gochujang adds all the flavor, so you don't need anything else. Gochujang makes everything good, it's sweet, fresh, spicy, and salty.
Pour half of this sauce with the cubed chicken, then add the chicken to the pan with sweet potatoes. Roast chicken and potatoes together until the chicken is tender. Now, here's the key. During the last few minutes of cooking, you'll need to switch the oven to a barbecue to help give the chicken a little magic and make the sauce really stick to the chicken.
Finished.
While roasting everything in the oven, start preparing the rest of the bowls. Make yum yum sauce with the remaining Gochujang sauce by mixing it with your choice of yogurt, sour cream or mayonnaise. Personally, I like to use yogurt, but I use the most that you and your family love. Either way, this sauce slightly goes beyond addiction. It is my recommendation to double it.
For vegetables, I throw a handful of turnips with fresh lemon juice and coriander. Other extras include avocado, kimchi, carrots, cucumber and green onions. You can use all of these or choose your preferences.
At this point, it's time to get everything together. Add rice to the bowls, then put chicken, potatoes, turnip and yum sauce on top of it. Finish all the extras you want. There is a lot here, but everything is very good!
A few helpful notes ...
What is Guochujang? Gochujang it's Korean pepper paste, if you're not familiar. It's spicy with a little sweetness, and very tasty. Traditional in many Korean sauces, it is often used in Korean fried chicken or simply as a dipping sauce. Here, we love Gochujang and I use it for more than just Korean food. It's good for anything you will enjoy with a spicy sauce touch.
You can buy Gochujang from most grocery stores. I know Hull Foods and a nutshell dealer. I highly recommend this Gochujang brand. It definitely offers the best real Korean food. Hint? If you like a lot of sauce (we love it!), I recommend double your Gochujang sauce so you can get more to serve ... yes, in addition to the yum yum cream sauce. Not enough sauce, you know?
Now, let's talk about the grill. When using broilers, you should closely monitor the food. And I really mean it. Things can transform from perfect to complete burning within seconds. Trust me, I know from experience. All broilers vary, so cooking times vary from oven to oven.
