Grain-free, refined sugar-free almond pies. The easy and delicious Paleo Pie recipe is sure to please the whole family!

These almond flour pancakes have been a staple in my home since around 2011. They are light, thin, moist and indistinguishable from pancakes made of multipurpose flour. You will just have to taste them to believe it!

After years of cooking and baking-free bread, I found that the mix of almond flour and tapioca flour gave a superb texture that mimicked wheat flour. The fact that almond flour is versatile and has a great nutrient profile makes it one of the staples in the kitchen.
Almond pancakes are a weekly event in my home. These cereal and paleo pancakes require only a few basic ingredients. It's perfect for sharing with friends and family who have diet restrictions and are a safe bet to entertain lunch.
I like to make pie mixture in a blender but you can also mix it together in a mixing bowl. The blender approach is simply noisy and minimal cleaning method, but it definitely isn't required!
How to make almond patties:
Simply add ingredients to your blender and just blend them until smooth mixture.


Heat a large non-stick frying pan over medium and low heat and add a large amount of coconut oil to cover the entire surface.

Measure half a cup of the mixture and pour it into a hot skillet. Allow the mixture to cook for a few minutes, so you can tell the prepared pancakes.

Carefully turn the pancakes and cook them on the other side for a minute or two until they are cooked. Repeat this process for the remaining mixture.

This recipe turns into such a stunning texture, even pie lovers will not be able to tell them that they are grain-free.

Recipe notes:

Since these pancakes are made from a nut meal, the flavor and texture are both nutty, so they aren't just as soft as the pie made from all-purpose flour. I made a note in the recipe that you can add two tablespoons of tapioca flour if you like. Although you don't have to use tapioca flour to make this recipe work, it does help tie pancakes and make them a little lighter.
For those of you who find it difficult to turn pancakes without breaking, I recommend adding tapioca flour. It's not a necessary ingredient but it does go up a little pancake game. Tapioca flour is still considered a friend of Paleo, so if you follow a cereal-free, paleo or primitive diet, it won't pose a problem.

Recipe modifications:

Replace unsweetened almond milk with cashew milk, walnut milk, coconut milk, or any of your favorite non-dairy milk.
You can substitute almond flour with hazelnut flour in a 1: 1 ratio if you wish.
If the pastry mixture is too watery, add more almond flour or tapioca flour until it becomes denser. Different brands have different grindings for almond meal / flour, which may lead to different consistency. If you prepare this recipe using a meal / flour not exactly from this brand, you may end up with various results. You can also use a small amount (1 teaspoon to 1 tablespoon) of coconut flour to help increase the thickness of the mixture as well.
I love to eat pancakes with banana slices, raspberries, chopped roasted almonds, and pure maple spray, but you can be creative with additions.

Ingredients

  • 1-3 / 4 cups of ground almond flour
  • 1 teaspoon baking powder
  • 2 tablespoons of tapioca flour, optional (see note) 
  • 1/4 teaspoon salt
  • 2 eggs lightly beaten
  • 1 teaspoon pure vanilla extract
  • 3/4 cup almond milk

To apply:

  • blueberry
  • Banana slices
  • Almond butter
  • Pure maple syrup
  • Roasted almonds
  • Hemp seeds

instructions

  1. Add all ingredients to the mixer and mix until smooth (note: you can prepare these pancakes in a mixing bowl using a whisk or hand mixer if you do not have a mixer).
  2. Heat a large skillet over medium heat and add enough oil to cover the pan lightly.
  3. Measure half a cup of the mixture and pour into the pan.
  4. Cook until the sides of the pans hold together and escape a bubble or two from the top, about 2 to 3 minutes.
  5. Carefully flip the pancakes (these are a little more fluffy than the wheat flour pancakes), cook an additional 45 seconds to 1 minute and then repeat with the remaining mixture.
