My mom used to pull a bag of pre-chopped lettuce from the fridge, doused it in some blue cheese or ranch, and called it vegetables. A simple side spring salad made with spinach, fresh berries and goat's cheese in balsamic vinegar sauce.

Ingredients

  • 2 tablespoons of extra virgin olive oil
  • 4 teaspoons balsamic vinegar
  • ½ teaspoon honey
  • Small teaspoon kosher salt
  • Small teaspoon ground black pepper
  • 1 cup of berries
  • ¼ cup chopped red onions
  • 5 ounces small spinach
  • 2 ounces goat cheese, crumbled

instructions

  1. To prepare the sauce, whisk olive oil, balsamic vinegar, honey, salt and black pepper together. Sit aside.
  2. When you're ready to serve salads, toss the berries with red onions, spinach and goat cheese in a large bowl. Add the fabric again. Serve immediately.
