Nutrition for squash Zhao Min Squash

This is a lower carb option for a typical Chow Mein. The ingredients are limited and clean (both compatible with Whole30 and Paleo) so you don't have all of the MSG it contains or the additives or sugars that come with the typical Chow Mein as well. This recipe contains less than 10 ingredients to say and accomplish, and it comes with less than 150 calories per serving! Zhao Min Squash Spaghetti

  • 1 large squash
  • 1/4 cup coconut aminos (or tamari if not paleo)
  • 3 cloves garlic, minced
  • 1 tablespoon of coconut sugar
  • 2 teaspoons of fresh grated ginger
  • 1/4 teaspoon white pepper (or black pepper!)
  • 2 tablespoons olive oil
  • 1 diced onion
  • 3 stalks celery, cut diagonally
  • 2 cups slice cole mix (shredded cabbage and carrots)

instructions

  1. Cut zucchini pasta half the length of wisdom and extract the seeds. Place the leather side up in a 13 x 9 pyrex and pour 1/2 inch of water into the bottom of the pan. Bake at 400 degrees for 30-40 minutes, until the meat becomes very tender. Once you're done, extract the meat with a fork until it turns into strings, and set it aside.
  2. In a small bowl, whisk coconut amino with garlic, coconut sugar, ginger and white pepper. Sit aside.
  3. Heat olive oil in a large skillet over medium heat. Add the onion and celery and cook, stirring constantly, until cooked for 3-4 minutes. Stir the cabbage until heated, about 1 minute.
  4. Add the zucchini mixture to the spaghetti sauce until it mixes well for about 2 minutes.
  5. Serve immediately.
