Raise your hand if you eat tacos at least once or twice a week as you get older? My siblings and I got ground beef tacos all the time when we were kids. Tacos was an easy and quick dinner that my father could make in less than 30 minutes. They were dinner eaten by each of his children. So all of us 7 ...


Okay. So at that time Asher was not present (which is very strange to think of life without Asher!), And Red was just a kid. So I think he was like 5 of his children. However, we all ate them, and we all loved them. My mom and I preferred hard shells with melted cheddar. While the boys ate their food wrapped in a delicate tortilla style burrito. Nothing fancy at all, but we loved them.


No, we certainly weren't eating mango sauce at the time. Although it would be really good, I hope we can do that.


It's hard to believe, but I don't have a recipe for ground taco meat on HBH. I have a lot of other tacos recipes, but nothing like the tacos we ate when we were kids. Perhaps because they were not something special. But i don't know, maybe i can find a good thing to share it one day soon.

Meanwhile, I have a taco salad. It's delicious, and much better than the tacos we ate when we were kids. Both mom and dad agree.


It's large and green, laden with homemade taco spicy meat, black beans, mango, avocado, cheese and tortilla chips topped with the best baja sauce. Once again ... delicious! Not boring, which is very important when it comes to eating salad here. I love my loaded and colorful salads, guided by carbohydrates and always covered with cheese.

As for taco meat, I seasoned it with smoked chili powder, smoked sweet pepper and cumin. I love this narration, because it leaves the meat really tasty, smoky, and not too hot.

As for vegetables, I know that romaine is traditional in taco salad. But I wanted to use the green color that holds up well for preparing meals, and is also good on the go. So I went with the turnip. It's a little thicker and tends to wilt less than the Romans. It is the perfect green salad to make a salad the night before. However, you can of course use the lush green that you love the most!


To finish this salad, I went with the baja sauce. Oh how I love this sauce! It's creamy, cold, hot, extra lemon, and addicting. The sauce alone makes you want to eat salad. It kinda reminds me of a hot farm, but much better. I used regular Greek yogurt to keep the fresh creamy jalapeno for some spices, and a little honey to balance everything, then fresh coriander and chives to flavor herbs somewhat.


Trust me, it is one of the best salad dressings I've ever made.

This is the perfect salad for takeaway as well! You can make everything in advance. Even throwing salads together and then packing them in glass jars (these are my favorites). I recommend separating meat and vegetables separately, just in case you want to reheat the meat (which I love doing).


As fun as an office salad as it is for a nice dinner all week!

Spicy Turkey Taco Salad With Baja Lime Sauce


Taco meat marinated with hot pepper, fresh vegetables, black beans, avocado, mango and a little cheddar cheese as well. Topped with tortilla chips for grinding, and ending in a creamy, spicy and cool baja mixture, delicious!


The preparation time is 20 minutes

Cooking time 20 minutes

The total time is 40 minutes


Ingredients


2 tablespoons of extra virgin olive oil

1 pound of turkey or chicken

2-3 teaspoons of chili powder

1 tablespoon smoked red pepper

1 tablespoon of cumin seeds (or 1 1/2 teaspoon of ground cumin)

1 teaspoon garlic powder

Kosher salt and pepper

1/3 cup fresh chopped coriander

6 cups of green leaves

1 cup cooked black beans

1 avocado, chopped

1 mango, diced

3/4 cup cubed cheddar cheese

Crushed tortilla chips or slices

Beja for clothes
1 cup regular Greek yogurt

2 lemon juice

1 tablespoon of apple cider vinegar

2 teaspoons honey

1 jalapeno, classified as desired

1/4 cup fresh coriander



Kosher salt
1 tablespoon of fresh minced garlic

instructions

1. Heat olive oil in a large skillet over medium heat. Add turkey and cook until brown, for about 5 minutes. Add hot pepper powder from chipotle, paprika, cumin, garlic powder and a pinch of salt and pepper. Add half a cup of water and cook, stirring occasionally, until the water evaporates for 5 minutes. Remove from heat and stir the coriander.



2. Make a bandage. Mix all ingredients except chives in a blender and beat until smooth. My heart is chives. The seasoning will stay for a week in the fridge.



3. In a large salad bowl, mix vegetables, black beans, avocado, mango and cheese. Put the salad with turkey meat, then sprinkle it with the marinade (below). Mix and add to the tortilla chips. Enjoy!
