Arrabbiata sauce is a spicy Italian tomato sauce made with garlic, tomatoes, and red chili peppers. It is typically served with pasta and can be made mild or spicy depending on the amount of chili peppers used. The name "arrabbiata" means "angry" in Italian, referring to the heat from the chili peppers.

ingredients
- 2 small garlic cloves, peeled and mashed
- 2 tablespoons of extra virgin olive oil
- 1 finely chopped red pepper
- 1 x 400 grams of chopped tomatoes

- Pour the oil into a saucepan and sauté the garlic over medium heat for 1 to 2 minutes, until fragrant but not brown. Add the chilies and sauté for another minute, then add the tomatoes along with 1 teaspoon salt and 1/2 teaspoon sugar. Stir well to combine the ingredients and simmer for 20 minutes, stirring regularly. The sauce will slowly thicken as it cooks.
- Taste and adjust seasonings if needed. Serve with whipped pasta, or blend it in first to make a smoother sauce if you prefer. Will keep refrigerated for up to five days.
