Ingredients:
2 cups all-purpose flour
1/2 tsp salt
1/2 tsp sugar
1 tbsp oil
1/2 cup lukewarm water
2 tbsp ghee or butter
1 cup cooked chicken, shredded
1 small onion, finely chopped
1/2 tsp red chili powder
1/2 tsp garam masala
1/4 tsp turmeric powder
1/4 tsp cumin powder
Salt, to taste
Oil, for cooking
Instructions:
In a mixing bowl, add flour, salt, sugar, and oil. Mix well.
Add lukewarm water little by little and knead into a smooth dough.
Cover the dough and let it rest for 20 minutes.
In a pan, heat 2 tbsp ghee or butter. Add chopped onions and saute till they turn translucent.
Add shredded chicken, red chili powder, garam masala, turmeric powder, cumin powder, and salt. Mix well and cook for 2-3 minutes. Turn off the heat and let the chicken mixture cool.
After 20 minutes, knead the dough once again and divide it into 6-7 equal portions.
Take one portion and roll it into a thin circle. Apply oil on the surface and sprinkle some flour on it.
Cut the circle into thin long strips using a pizza cutter or a knife.
Take one strip and place it on top of another. Continue doing this until you have a stack of 6-7 strips.
Roll the stack into a spiral and tuck the end underneath.
Cook on medium heat till brown spots appear on one side. Flip and cook the other side.
Apply some oil on both sides and cook till the paratha is crisp and golden brown.
Serve hot with your favorite curry or chutney.
