Chicken Reshmi Kabab is a popular North Indian dish that is loved for its tender, juicy, and flavorful chicken. Here's the recipe:
Ingredients:
- 500g boneless chicken, cut into small pieces
- 1 cup yogurt
- 2 tbsp ginger-garlic paste
- 1 tsp red chili powder
- 1 tsp garam masala powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 2 tbsp lemon juice
- 2 tbsp oil
- Salt to taste
- 1/2 cup cream
- 1/2 cup cashew nuts, soaked in water for 30 minutes
- 1/4 cup fresh coriander leaves, finely chopped
- 2 green chilies, finely chopped
- Butter for basting
Instructions:
- In a large bowl, mix the yogurt, ginger-garlic paste, red chili powder, garam masala powder, cumin powder, coriander powder, turmeric powder, lemon juice, oil, and salt. Add the chicken pieces and mix well. Cover and marinate for 2-3 hours in the refrigerator.
- Preheat the oven to 200°C. Thread the marinated chicken pieces onto skewers and place them on a baking tray. Brush with butter and bake for 20-25 minutes or until the chicken is cooked and slightly charred.
- In a blender, blend the soaked cashew nuts and cream until smooth. Heat a non-stick pan and add the cashew-cream mixture, coriander leaves, green chilies, and salt. Cook for 2-3 minutes until the mixture thickens.
- Remove the chicken kababs from the oven and baste with the cashew-cream mixture. Place the kababs back in the oven for 2-3 minutes until the cashew-cream mixture is slightly browned.
- Serve hot with mint chutney and sliced onions. Enjoy your delicious Chicken Reshmi Kabab!
