What is cobb salad?
The original Cobb salad was developed by Bob Cobb in 1937 for the Brown Derby restaurant in Los Angeles. It has become a popular American dish and is similar to a chef's salad. It starts with a bed of green lettuce with rows of ingredients arranged on top of it just like we did in our Salmon Cobb Salad, and it's served with a vinaigrette.

We love using Juicy Instant Pot Baked Whole Chicken but store-bought rotisserie chicken works great to save time and the only thing you have to cook is bacon and hard-boiled eggs. This is a very satisfying salad. Since it contains a lot of protein, you can eat it as a main course or as a side salad.
Can I substitute blue cheese?
The favorite cheese for the original Cobb salad is blue cheese. We used blue gorgonzola cheese, but blue cheese or blue cheese works just as well. If you're not a fan of blue cheese, crumbled feta cheese will work here, too.
What is the best cobb salad dressing?
Vinaigrette is the classic dressing for a Cobb salad. We use our homemade balsamic vinaigrette here. If you want to substitute salsa, Avocado Ranch or Jalapeno Ranch will work just fine. If you're using a creamy ranch-based dressing, I recommend using feta cheese instead of blue cheese.
Can I make a Cobb salad?
You can prepare the salad and dressing 2-3 hours before dinner. Cover with plastic wrap and refrigerate. Keep the salad and dressing separate until ready to serve. Here are some illustrative tips:
Dressing - Put it in a mason jar so you can shake it well just before serving in case it separates. Serve it straight from a mason jar.
Lettuce can be rinsed and dried beforehand (a salad spinner works best), then refrigerated until ready to use.
Avocados should be cut into slices shortly before serving because avocados tend to change color when they come into contact with air.
Chicken breasts can be precooked and refrigerated (or you can use meat from a store-bought rotisserie chicken to save time).
Bacon can be browned. Drain on paper towels and refrigerate until ready to use.
Eggs can be made several days in advance. Cook hard-boiled eggs and refrigerate them until ready to use.
