Ingredients:
500 grams boneless mutton, cut into small pieces
1 cup broken wheat
1/2 cup chana dal (split bengal gram)
1/2 cup moong dal (split green gram)
1/2 cup urad dal (split black gram)
1/2 cup masoor dal (red lentil)
3 onions, finely chopped
2 tablespoons ginger-garlic paste
2 teaspoons red chili powder
2 teaspoons garam masala powder
1/2 teaspoon turmeric powder
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1/2 teaspoon black pepper powder
Salt to taste
Oil or ghee for cooking
For garnishing: fried onions, chopped coriander leaves, chopped mint leaves, lemon wedges
Instructions:
Wash the broken wheat and dals separately and soak them in water for at least 2 hours.
In a pressure cooker, add the mutton, 1 chopped onion, 1 tablespoon ginger-garlic paste, 1 teaspoon red chili powder, 1/2 teaspoon turmeric powder, and salt to taste. Add enough water to cover the mutton and pressure cook for about 30 minutes, or until the meat is tender.
In a separate pan, heat some oil or ghee and fry the remaining chopped onions until golden brown. Add the remaining ginger-garlic paste and fry for a minute.
Drain the water from the soaked broken wheat and dals and add them to the pan. Add enough water to cover the mixture and cook on medium heat, stirring occasionally, until the grains and dals are soft and well-cooked.
Once the mutton is cooked, remove it from the pressure cooker and shred it using a fork.
Add the shredded mutton to the pan with the cooked broken wheat and dals. Add the garam masala powder, cumin powder, coriander powder, black pepper powder, and remaining red chili powder. Mix well and cook on low heat for another 15-20 minutes, stirring occasionally.
Adjust the seasoning according to taste and add more water if necessary to get the desired consistency.
Serve hot, garnished with fried onions, chopped coriander leaves, chopped mint leaves, and lemon wedges.
