Tomato and Nduja bruschetta is a popular Italian appetizer dish made with grilled bread, topped with sliced tomatoes, and a spicy spread made from Nduja, a soft and spreadable pork sausage from Calabria, Italy. The bread is usually rubbed with garlic and drizzled with olive oil before being topped with the tomatoes and Nduja spread. This dish is usually served as a starter or a light snack.

Use ripe tomatoes to make sweet and spicy bruschetta bites. It's perfect for a garden party, when it doesn't matter if you make a little mess


ingredients

  1. 1 large baguette, drained and cut into 16 slices
  2. 300 grams of ripe tomatoes, coarsely chopped
  3. 400g cannellini beans, drained and rinsed
  4. A small bunch of chopped parsley
  5. 2 teaspoons red wine vinegar
  6. 2 tablespoons of extra virgin olive oil
  7. 8-10 nduja

  1. Preheat oven to 200°C/180°C fan/gas 6. Arrange baguette slices on a large baking sheet and bake for 8-10 minutes until crispy and slightly golden. (You may need to do this in two batches). Take it out of the oven and leave it to cool.
  2. Combine tomatoes, beans, parsley, vinegar and oil in a bowl, season well and set aside.
  3. Spread about 1/2 teaspoon of Nduja on each slice of baguette and arrange on a serving plate. Drizzle tomato and bean mixture over baguette slices and serve.
