Waldorf salad chicory bites



Pair Waldorf chicory salad bites with a glass of fizz for a garden party. Quick nibbles like these will go down nicely and are easy to set up


Waldorf salad is a classic dish made with chopped apples, celery, walnuts, and mayonnaise. Chicory bites are bite-sized pieces of chicory, a type of bitter leafy green vegetable. To make Waldorf salad chicory bites, you would need to chop the chicory into small pieces and mix it with the other ingredients to create a bite-sized version of the classic salad. This would be a great way to incorporate more greens into your diet while still enjoying the flavors of a traditional Waldorf salad.



ingredients


2 heads of endive (we used red)

1 green apple, seeded and finely chopped

1 stalk of celery, finely chopped

A small handful of coarsely chopped walnuts

6 red grapes, finely chopped

2 tablespoons of natural yogurt

½ squeezed lemon

1 teaspoon Dijon mustard

50g crumbled blue cheese or vegan alternative

1-Snip off the root of each dandelion head and pull off the leaves (you should get 16-20 leaves). Lay out the leaves on a large serving platter (see tip below).

2-Combine apple pieces, celery, walnuts, grapes, yogurt, lemon juice and mustard in a bowl and season well. Put a little stuffing into each dandelion leaf toward the root end, letting the leafy end act as a handle. Crumble over blue cheese and serve.
