8 ounces lasagna noodles, cut into pieces (about 10 noodles)
1 tablespoon extra virgin olive oil, plus more for drizzling
1 chopped onion
1 pound ground beef or sausage
3 minced garlic cloves
1 teaspoon dried oregano
2 tablespoons of tomato paste
4 cups low-sodium chicken broth
(1) 15-ounce can crushed tomatoes
1/2 cup finely chopped fresh basil leaves, for garnish
1/3 cup grated Parmesan cheese, plus more for sprinkling, optional
1/4 cup heavy cream or half-and-half

directions
Cook pasta according to package directions. Drain and drizzle with a little olive oil.
Add 1 tablespoon of olive oil to a large saucepan and heat over medium-high heat. Add the onions to simmer until they start to soften. Add the ground beef, garlic, and oregano and continue to cook until the meat is browned and cooked through. Add the tomato noodles, continue to stir, and cook for 2 minutes.
Add chicken broth, tomatoes and a cup of water. Cover and bring to a simmer. Remove the lid and cook until reduced slightly, about 10 minutes. Stir in the noodles, basil, Parmesan, and heavy cream. Simmer for another two minutes.
Serve on plates, garnishing with chopped basil, ricotta cheese, and Parmesan, if desired.
