Ingredients:
2 lbs beef tenderloin, trimmed and tied
1/4 cup finely ground espresso beans
2 tbsp brown sugar
1 tbsp smoked paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp sea salt
1 tsp cumin
1/4 cup whiskey
1/4 cup maple syrup
2 tbsp butter
Instructions:
Preheat oven to 400°F.
In a bowl, mix together the ground espresso, brown sugar, smoked paprika, garlic powder, onion powder, sea salt, and cumin.
Rub the spice mixture all over the beef tenderloin, covering it evenly.
Heat a large oven-safe skillet over high heat. Sear the beef tenderloin on all sides until browned, about 2 minutes per side.
Transfer the skillet to the oven and roast for 15-20 minutes, or until the internal temperature reaches 125°F for medium rare.
While the beef is roasting, make the whiskey glaze. In a small saucepan, heat the whiskey and maple syrup over medium heat until reduced by half. Remove from heat and whisk in the butter until melted and smooth.
When the beef is done, remove it from the skillet and let it rest for a few minutes before slicing.
Drizzle the whiskey glaze over the sliced beef tenderloin and serve.
