Ingredients:


1 cup orzo pasta

1 English cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/2 cup Kalamata olives, pitted and halved

1/2 cup crumbled feta cheese

1/4 cup chopped fresh parsley

1/4 cup chopped fresh dill

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

Juice of 1 lemon

Salt and pepper to taste

Instructions:


Cook the orzo pasta according to the package instructions. Drain and rinse with cold water to cool it down.

In a large bowl, combine the cooked orzo, diced cucumber, cherry tomatoes, red onion, Kalamata olives, crumbled feta cheese, parsley, and dill.

In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, lemon juice, salt, and pepper.
