Sheet pan steak and veggies is a simple and delicious one-pan meal that's perfect for a quick weeknight dinner. Here's a basic recipe to get you started, but feel free to customize it with your favorite seasonings and vegetables.


Ingredients:


For the Steak:


2 ribeye or sirloin steaks (about 1-inch thick)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

For the Veggies:


2 cups baby red potatoes, quartered

2 cups broccoli florets

2 cups bell peppers, sliced (use a mix of colors for variety)

1 cup carrots, sliced into rounds

1 cup cherry tomatoes

2 tablespoons olive oil

Salt and pepper, to taste

Optional: additional herbs or seasonings of your choice (such as paprika, garlic powder, or onion powder)

Instructions:


Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray.


In a small bowl, mix together the olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper to create a marinade for the steak.


Place the steaks on a plate and brush them with the marinade on both sides. Allow them to marinate while you prepare the vegetables.


In a large bowl, combine the prepared red potatoes, broccoli florets, bell peppers, carrots, and cherry tomatoes. Drizzle with olive oil and season with salt, pepper, and any additional herbs or seasonings you like. Toss to coat evenly.


Spread the seasoned vegetables evenly on the prepared baking sheet.


Place the marinated steaks on the baking sheet beside the veggies.


Roast everything in the preheated oven for about 20-25 minutes, or until the steak reaches your desired level of doneness. For medium-rare, aim for an internal temperature of 130-135°F (55-57°C).


If you prefer your veggies to be more tender or roasted, you can remove the steaks when they're done to your liking and continue roasting the vegetables for an additional 5-10 minutes.


Once everything is cooked, remove the sheet pan from the oven. Allow the steaks to rest for a few minutes before slicing them.


Serve the sliced steak alongside the roasted veggies. You can garnish with fresh herbs if desired.
