Ingredients :
4 sirloin steaks, about 1 inch thick
Salt and black pepper, to taste
2 lbs baby potatoes, halved
2 tablespoons of olive oil
4 cloves of garlic, chopped
4 tablespoons unsalted butter
2 tablespoons chopped fresh parsley
Instructions :
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Season the steaks with salt and black pepper, to taste.
In a large bowl, toss the potatoes with olive oil, salt and pepper. Arrange the potatoes on the prepared baking sheet and bake for 20 minutes.
While the potatoes are in the oven, heat a large skillet over medium-high heat. Add the steaks to the pan and cook 3-4 minutes on each side, or until browned and cooked to desired degree of doneness
Remove the steaks from the pan and set them aside to rest.
Add the chopped garlic to the same pan and cook for 30 seconds, or until fragrant. Stir in the butter until it has melted and combined with the garlic.
Place the cooked steaks on a serving platter and drizzle the garlic butter on top.
Serve the steaks with the roasted potatoes and garnish with chopped parsley.
