Ingredients:
3 ripe plantains
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup green olives, sliced
1/4 cup raisins
1/2 cup tomato sauce
1/4 teaspoon ground cumin
1/4 teaspoon dried oregano
Salt and pepper to taste
Vegetable oil for frying
2 eggs, beaten
Directions:
Peel the plantains and cut them into 3-4 inch pieces. Fry in hot oil until golden brown, then remove and drain on paper towels.
In a skillet, cook the ground beef over medium heat until browned. Add the onion and garlic, cooking until the onion is translucent.
Stir in the olives, raisins, tomato sauce, cumin, oregano, salt, and pepper. Simmer for about 10 minutes until the mixture thickens.
Preheat your oven to 350°F (175°C).
Slice each fried plantain piece in half lengthwise, but not all the way through, to create a pocket.
Fill each plantain pocket with the beef mixture and place them in a baking dish.
Brush the tops with beaten egg.
Bake for 20 minutes or until the tops are golden and the filling is heated through.
