Creamy Chicken Pasta with Sun-Dried


Quick, creamy, and full of flavor! This chicken pasta with sun-dried tomatoes is a crowd-pleaser for any night of the week.

Ingredients:

2 chicken breasts, cubed

8 oz pasta (penne or your choice)

1/2 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup shredded mozzarella cheese

1/4 cup Parmesan cheese, grated

2 garlic cloves, minced

1 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh basil (for garnish)

Directions:

Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.

Prepare the chicken: In a large skillet, heat the olive oil over medium heat. Add the cubed chicken and season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and fully cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

Make the sauce: In the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant. Pour in the heavy cream, stirring occasionally. Bring the sauce to a gentle simmer, then reduce the heat to low.

Add the cheese: Stir in the shredded mozzarella and Parmesan cheese, allowing them to melt into the sauce. Simmer for another 2-3 minutes until the sauce thickens.

Combine: Return the cooked chicken and pasta to the skillet, tossing everything together to coat the pasta and chicken evenly with the creamy sauce.
