Lobster Newberg

Ingredients:

2 lobster tails, cooked and chopped

2 tablespoons butter

1 tablespoon all-purpose flour

½ cup heavy cream

¼ cup milk

2 egg yolks, lightly beaten

1 tablespoon tomato paste

1 teaspoon paprika

Salt, to taste

Pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions:

Melt butter in a pan and whisk in flour to create a roux.

Gradually add heavy cream and milk, stirring constantly.

Temper the egg yolks with a bit of the hot sauce, then add back to the pan.

Stir in tomato paste and paprika, cooking until thickened.

Add the cooked lobster and heat through.

Season with salt and pepper, and garnish with parsley.

Serve over toast or rice for a complete meal.
