Cheesy Baked Fajita Chicken

Ingredients:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

1 cup shredded cheddar cheese

1 cup salsa

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions:

Prepare the Chicken:

Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish.

In a small bowl, combine the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.

Rub the spice mixture all over the chicken breasts to ensure they are well coated.

Add Vegetables:

Place the seasoned chicken breasts in the prepared baking dish.

Scatter the sliced bell peppers and onions around the chicken.

Bake:

Drizzle olive oil over the chicken and vegetables.

Pour the salsa evenly over the chicken and top with shredded cheddar cheese.

Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the cheese is melted and bubbly.

Serve:

Remove from the oven and let it rest for a few minutes.

Garnish with chopped fresh cilantro and serve with lime wedges.
