Ingredients:
4 slices of sourdough bread
4 slices of sharp cheddar cheese
2 slices of mozzarella cheese
2 fresh jalapeños, thinly sliced
2 tablespoons butter, softened
1 tablespoon fresh cilantro, chopped
Pinch of crushed red pepper flakes (optional)
Directions:
Preheat a skillet or griddle over medium heat.
Spread butter evenly on one side of each slice of bread.
Place two slices of cheddar cheese on the unbuttered side of two slices of bread.
Add mozzarella cheese slices on top of the cheddar.
Layer the sliced jalapeños evenly over the mozzarella.
Top with the remaining cheddar cheese slices.
Place the remaining bread slices on top, buttered side out.
Grill the sandwiches in the preheated skillet until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
Remove from the skillet and sprinkle with fresh cilantro and crushed red pepper flakes, if using.
Slice and serve immediately, enjoying the gooey, spicy goodness!
