Stick and Shrimp Surf & Turf with Mashed Potatoes and Sautéed Spinach:


Ingredients:

For the Steak:

2 ribeye steaks (or any cut of your choice)

Salt and pepper to taste

2 tbsp olive oil

2 tbsp butter

2 garlic cloves (smashed)

Fresh thyme or rosemary (optional)

For the Shrimp:

10-12 large shrimp (peeled and deveined)

1 tbsp olive oil

2 tbsp butter

2 garlic cloves (minced)

Lemon juice (from 1/2 a lemon)

Salt and pepper to taste

Chopped parsley for garnish

For the Mashed Potatoes:

4 large potatoes (Yukon Gold or Russet)

4 tbsp butter

1/4 cup heavy cream (or milk)

Salt and pepper to taste

For the Sautéed Spinach:

4 cups fresh spinach

1 tbsp olive oil

2 garlic cloves (minced)

Salt and pepper to taste

Instructions:

1. Prepare the Mashed Potatoes:

Peel and boil potatoes in salted water until tender (about 15-20 minutes).

Drain and mash the potatoes, then stir in butter and heavy cream until smooth. Season with salt and pepper to taste. Set aside and keep warm.

2. Cook the Steak:

Season the steaks generously with salt and pepper on both sides.

Heat a skillet or cast-iron pan over medium-high heat and add olive oil.

Sear the steaks for 3-4 minutes on each side (depending on the thickness) for medium-rare.

Lower the heat, add butter, garlic, and herbs (if using), and baste the steaks with the melted butter for another 1-2 minutes.

Remove from heat and let the steak rest for 5 minutes.

3. Cook the Shrimp:

In a separate pan, heat olive oil and butter over medium heat.

Add the garlic and cook until fragrant (about 1 minute).

Add the shrimp, season with salt and pepper, and cook for 2-3 minutes per side until they turn pink and opaque.

Squeeze lemon juice over the shrimp and garnish with parsley.

4. Sauté the Spinach:

In the same pan as the shrimp (or a new one), heat olive oil over medium heat.

Add garlic and sauté for 30 seconds.

Toss in the spinach and cook until wilted (about 2-3 minutes). Season with salt and pepper.

To Serve:

Place the mashed potatoes on the plate, add the steak, and top with the garlic butter shrimp.

Serve with sautéed spinach on the side.

Garnish with fresh parsley and enjoy!

Tips:

For extra flavor, drizzle some of the garlic butter from the shrimp over the steak before serving.

Adjust cooking times based on your preferred doneness for the steak.
