Crispy Potato Latkes with Creamy Dipping Sauce


Ingredients 📝

Latkes:

4 large russet potatoes, peeled and grated

1 medium onion, grated

2 large eggs

1/4 cup all-purpose flour (or matzo meal)

Salt and pepper, to taste

1/2 tsp baking powder (optional, for extra fluffiness)

Oil for frying (vegetable or canola)

Creamy Dipping Sauce:

1/2 cup sour cream

1/4 cup mayonnaise

1 clove garlic, minced

1/2 tsp smoked paprika (plus extra for garnish)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Prepare the Latke Mixture:

Grate the potatoes and onion, then place them in a clean kitchen towel. Squeeze out as much excess water as possible.

In a large bowl, mix the grated potatoes and onion with eggs, flour, salt, pepper, and baking powder (if using) until well combined.

Form and Fry the Latkes:

Heat about 1/4 inch of oil in a large skillet over medium-high heat.

Scoop about 2 tablespoons of the potato mixture for each latke and flatten slightly with a spatula.

Fry the latkes in batches, cooking each side for about 3-4 minutes, until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.

Make the Dipping Sauce:

In a small bowl, combine sour cream, mayonnaise, minced garlic, smoked paprika, salt, and pepper. Stir well until smooth.

Serve:

Arrange the latkes on a plate, garnish with fresh parsley, and serve with the creamy dipping sauce. Sprinkle a bit of smoked paprika on the sauce for extra color.
