For the poached chicken:
• 1 whole chicken
• 4-5 slices of ginger
• 5 cloves garlic (crushed)
• 2-3 stalks of green onions
• 1 tsp salt
• Water (enough to cover the chicken)
For the crispy fried chicken:
• 1-2 chicken thighs or breasts
• 1 egg (beaten)
• 1 cup flour
• 1/2 cup breadcrumbs (panko preferred)
• Salt and pepper
• Oil for frying
For the rice:
• 2 cups jasmine rice (rinsed)
• 2 tbsp chicken fat or vegetable oil
• 4 cloves garlic (minced)
• 2-3 slices of ginger
• 2 cups chicken broth (from poaching the chicken)
For the sauce:
• 2 tbsp soy sauce
• 1 tbsp sesame oil
• 1 tbsp oyster sauce
• 1 tbsp sugar
Garnishes:
• Slices of cucumber
• Chili sauce (optional)
Instructions:
Poaching the Chicken:
1. Prepare the broth: In a large pot, bring enough water to cover the chicken to a boil. Add ginger, garlic, green onions, and salt.
2. Poach the chicken: Lower the chicken into the boiling water, then reduce the heat to a simmer. Poach for 30-40 minutes until fully cooked.
3. Rest the chicken: Once cooked, immediately place the chicken in an ice bath to stop the cooking and firm up the skin. Let it rest for a few minutes before slicing.
Making the Crispy Fried Chicken:
1. Season the chicken: Season chicken thighs or breasts with salt and pepper.
2. Coat the chicken: Dredge the chicken in flour, dip it in the beaten egg, then coat it in breadcrumbs.
3. Fry the chicken: Heat oil in a pan and fry the chicken pieces until golden and crispy, about 5-7 minutes per side. Drain on paper towels, then slice.
Cooking the Rice:
1. Sauté the garlic and ginger: In a pan, heat the chicken fat or vegetable oil. Add garlic and ginger, and sauté until fragrant.
2. Cook the rice: Add the rinsed jasmine rice to the pan and stir to coat with the garlic and ginger. Transfer the rice to a rice cooker, add 2 cups of chicken broth (from poaching), and cook as you normally would.
Serving:
1. Slice the poached chicken into pieces and arrange on a plate. Place the fried chicken on top.
2. Serve with fragrant rice, cucumber slices, and dipping sauces like chili or soy sauce.
