For the Steak:
• Steak (like ribeye or sirloin) – 250-300g
• Salt and pepper – to taste
• Butter – 1 tbsp
• Garlic – 2 cloves, smashed
• Fresh thyme or rosemary (optional) – a few sprigs
For the Fried Rice:
• Cooked rice – 1 cup (preferably a day old)
• Eggs – 2
• Green onions – 2, sliced
• Soy sauce – 1 tbsp
• Sesame oil – 1 tsp
• Vegetable oil – for frying
• Salt and pepper – to taste
Instructions:
Cooking the Steak:
1. Season the Steak: Generously season both sides of the steak with salt and pepper.
2. Sear the Steak: Heat a skillet over medium-high heat with a little oil. Add the steak and sear for 2-3 minutes on each side for medium-rare, or adjust based on your preferred doneness.
3. Add Butter and Aromatics: In the last minute of cooking, add butter, smashed garlic, and thyme/rosemary to the skillet. Baste the steak by spooning the melted butter over it.
4. Rest the Steak: Remove the steak from the pan and let it rest for about 5 minutes. Slice it into strips after resting.
Making the Fried Rice:
1. Scramble the Eggs: Heat a little oil in a large pan or wok over medium heat. Add the eggs and scramble until just cooked. Set aside.
2. Fry the Rice: In the same pan, add a bit more oil and add the rice. Stir-fry until the rice is heated through and slightly crispy.
3. Season the Rice: Add soy sauce, sesame oil, and green onions. Stir well. Add the scrambled eggs back in and mix everything together. Season with salt and pepper to taste.
Serve:
• Place the fried rice on a plate, top with sliced steak, and garnish with a slice of radish or extra green onions if desired.
