Ingredients:
- 2 cups cheese tortellini
- 2 tablespoons olive oil
- 1 lb chicken breast, cut into bite-sized pieces
- Salt and pepper, to taste
- 2 cups broccoli florets
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup Parmesan cheese, grated
- 1/2 cup chicken broth
- 1 teaspoon Italian seasoning
- Fresh parsley, chopped (optional, for garnish)
Directions:
1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to package directions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Season the chicken with salt and pepper, then add to the skillet. Cook for 5-7 minutes until golden brown and cooked through. Remove chicken from the skillet and set aside.
3. In the same skillet, add the broccoli and a splash of water. Cover and cook for 3-4 minutes until the broccoli is tender but still crisp. Remove broccoli from the skillet and set aside with the chicken.
4. Add minced garlic to the skillet and sauté for 1 minute until fragrant. Pour in the heavy cream, chicken broth, and Italian seasoning. Bring to a simmer, then reduce heat to low and stir in grated Parmesan cheese until smooth.
5. Add the cooked tortellini, chicken, and broccoli back into the skillet, tossing to coat everything in the creamy garlic Parmesan sauce.
6. Garnish with fresh parsley if desired, and serve warm.
