Grilled Salmon and Quinoa Stack with Avocado Cream


Ingredients:

2 salmon fillets

1 cup cooked quinoa

1 avocado

1 tbsp lime juice

1 tbsp olive oil

Salt and pepper to taste

Fresh cilantro for garnish

Directions:

Grill Salmon: Preheat the grill to medium-high heat. Season salmon with olive oil, salt, and pepper. Grill for about 5-6 minutes on each side, or until cooked through.

Make Avocado Cream: In a bowl, mash avocado and mix with lime juice, salt, and pepper.

Assemble Stack: On a plate, layer quinoa, followed by the grilled salmon, and top with avocado cream.

Serve: Garnish with fresh cilantro and enjoy a healthy, delicious meal!
