Roasted Garlic Cheddar Cauliflower Soup

This creamy roasted garlic cheddar cauliflower soup combines the nutty flavor of roasted garlic with sharp cheddar and tender cauliflower for a comforting, savory soup. Perfect for a cozy night, this soup is rich, flavorful, and packed with veggies!

Ingredients:

1 large head of cauliflower, chopped

1 head garlic

2 tablespoons olive oil

1 onion, diced

3 cups vegetable broth

1 cup shredded sharp cheddar cheese

Salt and pepper to taste

Fresh parsley for garnish (optional)

Directions:

Preheat oven to 400°F (200°C). Drizzle cauliflower and garlic head with olive oil, roast for 30 minutes.

In a pot, sauté onion until soft. Add roasted cauliflower, garlic (squeezed from cloves), and broth. Simmer for 10 minutes.

Blend until smooth, stir in cheese, salt, and pepper. Garnish and serve warm.
