Ingredients:
4 salmon fillets
1/4 cup orange juice
2 tbsp soy sauce
1/2 cup diced pineapple
1 tsp grated ginger
1 tbsp fresh cilantro, chopped (for garnish)
Salt and pepper to taste
Instructions:
Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Make the Glaze: In a bowl, whisk together honey, orange juice, soy sauce, ginger, salt, and pepper.
Prepare Salmon: Place the salmon fillets on the prepared baking sheet. Brush the glaze generously over each fillet.
Add Pineapple: Scatter diced pineapple around the salmon on the baking sheet.
Bake: Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
Garnish and Serve: Remove from the oven, drizzle with any remaining glaze, and garnish with fresh cilantro. Enjoy this tropical delight with rice or a fresh salad!
